Steamed Artichokes

I love artichokes, and I am very thankful my parents made them for us when we were kids. I have memories sitting down at the table with my brother and sister and eating our way to the heart! I will eat artichokes in way but my favorite it just good old steamed artichokes dipped in lemon butter.

Steamed Artichokes

I normally just steam the artichokes in water with a little salt and garlic, but this time I followed Tyler Florence way. I didn't notice a big difference but I liked adding more flavor to the water and it seemed to make the artichokes a little bit more delectable!

Steamed Artichokes (from Food Network, Tyle Florence

  • 4 sprigs parsley
  • 4 garlic cloves
  • 2 bay leaves
  • 2 lemons, cut in half
  • 1/4 cup white wine
  • 2 tablespoons olive oil
  • 1 quart water
  • Salt and pepper, to taste
  • 2 whole artichokes

Directions

Bring parsley, garlic, bay leaves, lemons, wine, oil, salt, pepper and water to a simmer.  

Wash artichokes under cold water. Cut off the stems close to the base. Pull off the lower petals that are small and tough. Cut off the top inch of the artichoke and rub with a lemon.

Place the artichokes pot, bottom up.  Cover and let simmer for 30 minutes.

(I didnt know this so good info from Food Network: The artichokes are done when a knife is inserted into the base and there is no resistance.)

Now just eat the bottom of the leaves by dipping them in butter/lemon mixture. Enjoy!

Runner Ramblings

 

I hope after my post last week, we are all learning to beat this dang heat! We are still sizzling over here and although hey promised some rain last night, I didn't see any. I know a lot of areas that need it a lot more than I do. Although we missed the rain, we apparently got hit with humidity,that isn't helping. I hear dry heat is great, I am going to guess that no matter what type of heat it is, they are all a little unbearable once they hit 100!

This week is a mish mash of a few things, I sure hope they inspire you as they have inspired me!
You don't have to love to exercise from the start to really start enjoying it. Stefanie over at The New Healthy talks about how to enjoy exercising and know that you are still an runner even if you stop for a few days.
Are you afraid to get out and run, or nervous about doing it wrong? My Mum Runs, wrote a great post on not being a afraid to get out and run. We might get hurt, or be slow or think we are not good enough, but we are. I totally agree that you need to run, run a 5k before you give up because one you do a race, your mind might start to love it. I know mine sure did!

project 52 week 30!

Eisley Swimming, project 52 week 30

Wow I cant believe we are already on Week 30! I also cant believe I have managed to keep up! Me and my camera are not very happy with each other right now and I am dying to hear the annoucement from Nikon on a new upgrade of the d7000 so I can either buy a cheaper d7000 or the upgrade! Anyway this sweet pic came from my phone and I love how it looks like a sweet girl from the 50s. I need to step out and get other photos that dont revolve around the girls!
