Organizational Hiatus, I am back!!

Okay I must say this past week or so I have been crazy busy. I have been thinking about the blog alot, came on to update once or twice but something managed to get in the way. I have managed to knock out most of my organization list over the past week and only have a few finishing touches to catch up on before we head out on our three vacations starting next Friday.

Here is an update on my organization and over the next few weeks I will show some pictures. Mostly after pics because I would just start working and totally forget to get my camera.

I have worked on some of the others but I won't cross them off the list until they are completely finished. I think if I did it just to cross it off than I would never go back and finish it After starting this list two weeks ago, I am feeling great pride in how much I have accomplished over the past couple of weeks!!

I promise that since most of my busyness finishes today, I should be up and blogging on a regular basis!!

Menu Planning Monday!

This last week was a good week. I was able to somewhat stink to my schedule. I worked on some organization around the house, managed to have a good week of working out, and healthy eating! We went to a couple of movies with friends and Avery has some fun time with her grandparents. She adores both sets so much and had a fun time with them. It makes it so easy knowing that when we are in San Diego next month she will having a wonderful fun time and than we will get to go on a special vacation to Myrtle Beach with her!! It will be an exciting month for all of us!

This week I will continue on with organizing. Last week I kind of got off schedule, I did some things not on my organizing list, and didn't do some stuff on my schedule. I plan to try and stay on track but any progress is good progress!!

 

Monday Planning:

  • Dinner- Cowboy Spaghetti and Salad
  • Organize- Laundry Room
  • To-Do- Finish up laundry, including all bedding and towels, do Shred in evening, yoga in morning, call and make appointments. call Sony about camera.

Tuesday Planning

  • Dinner- Going to Movie Screening with Dinner Provided
  • Organize-Closet & Dresser Drawers in my bedroom
  • To-Do- Target to get stuff on Need List, Go to the Gym, Take clothes to Good Will. Put 4th of July Decorations in garage.Trash Night

Wednesday Planning

  • Dinner- Jalapeno Stuffed Chicken, Kicked Up Potatoes and Green Beans
  • Organize- Fridge
  • To-Do- Start writing paper on health care, get some other school work completed. Do Shred in morning

Thursday Planning

  • Dinner- Quinoa Polenta with Sauteed Lentils and Portobellos
  • Organize- Closet & Dresser Drawers in Averys Room
  • To-Do- Shred in the morning,go to gym in evening.

Friday Planning

  • Dinner- Wheatberry Salad
  • Organize- taking a day off!
  • To-Do- Shred in the morning. Softball Game. Pick Up CSA, Swimming

Saturday Planning

  • Dinner- Kicked Up Bison Burgers, Sweet Potato Fries and Corn
  • Organize- Garage
  • To-Do- Farmers Market, Gym, Garage and Swimming

Sunday Planning

  • Dinner- BBQ Brisket, Baked Beans, Homemade Fries and Corn
  • Organize- Break
  • To-Do- Church, Mow Lawn and Swimming

Oh Garden Goodness!!! Veggie Omelet

So after having a quiche for dinner the other night, I was in first year garden heaven. I loved having a dish that most of the veggies came straight from my backyard garden.  I wanted more but I ate the quiche the night before so fast I didn't even have time to take a picture!

I decided that an omelet would be a perfect little treat and I put my cute little crocs on, marched outside grabbed a bell pepper, chives and jalapeno. The result was just perfect for me and I really enjoyed it for my little breakfast treat.

 

Garden Omelet

  • 1 Bell Pepper, diced
  • 1/2 Jalapeno, seeded and diced
  • 1/4 Sweet Onion, diced
  • 1/4 Pepper jack Cheese
  • 3 eggs
  • Chives to taste
  • Salt and Pepper to taste
  • Salsa
  • 1 tsp Olive Oil

In a small skillet, heat olive oil at medium high heat. Add bell pepper, onion and jalapeno. Sauté for about 4 minutes. In a bowl mix 3 eggs, salt, pepper and chives, whisk until mixed. Pour over vegetables in skillet. Allow egg to cook, lifting a bit to distribute uncooked egg underneath. Once most of egg has been cooked, add pepper jack cheese to top of omelet. Fold and half and let cheese melt. Remove for skillet, top with some fresh chives and salsa. Enjoy!
