One area in Kansas City really makes me super happy every time I go to it! The houses are adorable, the places to eat are awesome and its kind of hidden in between parts of the city that are little more run down than others so it makes it a totally gem!

The greatest thing about the neighborhood is that it has a lot of awesome food places that support local, sustainable, organic products! Each and every single restaurant in this area is such a treat to go to but today I am just going to talk about Westside Local! The decor is awesome and the patio looks like a fun spot to just sit and chat with friends on a nice evening.

After hitting up a big flea market my sister and I were starving so we headed over to Westside Local for lunch. They have a small menu but that is just how I like it!  It is a menu size that allows perfection across the board instead of too many choices and bad execution.

BLT at Westside Local

I ordered the the bacon, lettuce and heirloom tomato sandwich. They use Farm to Market grains sandwich bread, some beautifully bright heirlooms, greens and the best tomato jam I have ever had! I know it sounds crazy but this seriously was the best BLT I have ever had! I cant wait to try to make something similar to this at home. 

Pulled Pork at Westside Local

My sister was a little nervous eating her, she likes chain restaurants and when a menu is full of ingredients she hasn't seen she is a bit turned off. I could have picked everything on the menu and she was struggling to decide what to get. She decided on the pulled pork since it didn't seem too off the wall for her and while she liked it, she declared that she would have to get the BLT next time because it was so good! I loved that they used a Farm to Market Pretzel bun, its one of my favorites and I thought the sandwich was good but didn't compare to the BLT.

I cant wait to go back with my husband and every single friend who wants to go because it was really good! I even put BLTs on our at home menu this week (yep taking up one of the two days that we eat meat) because I cant get the dang thing out of my mind!

Okay I know I have made something similar to this before, but here is an improvement, a much better improvement!

I could eat these almost every single day! They are pretty easy to make and honestly I cant explain to you all how great cashew cheese is to make! If you haven't made them yet, do try! It is well worth it! 

Stuffed Mushrooms

Cashew Cheese Stuffed Mushrooms

  • 12 mushrooms with the stem taken out
  • 1/2 cup of cashew cheese
  • 1/4 cup of artichoke hearts, diced
  • 1/4 cup of sundried tomatoes, diced
  • 1/4 cup of green bell peppers, diced
  • Salt and Pepper
  • 1 clove of garlic, minced
  • Nutritional Yeast or  Parmesan cheese

Preheat oven to 400 degrees

Stuffed Mushroom Filling

In a bowl, place cashew cheese, artichoke hearts, sun dried tomatoes, green bell peppers, garlic and salt and pepper. Puree together until combined.

Place mushrooms in your cupcake/muffin pan. Stuff each mushroom with cheese mixture.

Stuffed Mushrooms

Top mushrooms with Parmesan or nutritional yeast on each mushroom.

Place in oven for 18 minutes. Cool for a minute or two than eat for best flavors!

This totally work for me! I love these darn things!

I want to go back

<Vacation RoundUp

We went on vacation a few weeks back and I really want to go back, permanently or at least as a second home!

I miss the cool mountain air, the view from every single spot you could stand and the time I got to spend with my family. I wish we could be on vacation every single day.

While I cant go back anytime soon, we at least have the memories in our head and the pictures to remind us of a vacation that was awesome!

Instead I am enjoying my new Mondays, my crazy get back on track days, which is exactly what I am doing today! It involves a little touch up paint, a lot of washing bedding and a little ironing!

Dinners for the week:

  • BLTs sandwiches and Squash Chips
  • Cashew Cheese Lasagna
  • Orzo with Roasted Vegetables
  • Quinoa Pizza Bites, Salad and Green Beans
  • Walnut Pesto Pea Pasta
  • Veggie Wraps

Workouts for the week:

  • Running: My schedule is 4 days with week.
  • PiYo and Bodypump

Where would you like to be right now? I am happy where I am but would be much happier in the PacNW fulltime!
