Whole Wheat Blueberry Waffles

We do lots of breakfast foods in this house. The girls constantly ask for waffles so I try to mix them up a bit! Today I just whipped out some ingredients and this little creature was made! I really loved the small hint of coconut and the blueberries where fresh from a local farm, you cant get much better than that! 

Healthy Whole Wheat Blueberry Waffles
made 8 waffles in my waffle maker

 

  • 2 cups of whole wheat pastry flour
  • 1 tbsp chia seeds (optional)
  • 3 tsp baking power
  • 2 cups of milk (I have used skim and coconut)
  • 3 tbsps apple sauce 
  • 1 tbsp coconut oil 
  • 2 eggs seperated, whites whipped
  • 1/2 cup of blueberries

 

In a bowl spoon mix flour, chia seeds, baking powder, milk, applesauce, oil and egg yolks. Once combined fold in your egg whites and blueberries.  Bake according to your waffle maker instructions. Serve plain or with your favorite topping!

This totally works for me! Minimal sugar, great taste!
