I think I have mentioned that Tuesdays are crazy in this house! We have very little time for dinner before we rush out the door to coach soccer, so meals have to be quick and healthy!
This recipe was super easy to make and tasted great! My kids love anything with the word pizza in it, plus these kind of remind me of a healthy unprocessed verison of Bagel Bites Pizza!
You just cut mini bagels (I got stoneground organic ones for TJs) in half, drizzle with a little olive oil, top with cut tomatoes and fresh mozzeralla. Cook at 400 degrees for about 7 minutes or until top is nice and bubbly. Remove from oven, plate and top it with basil, a drizzle of olive oil, a sprikle of parmesean, salt and pepper! So good, so fast and healthy! Now that totally works for me!
