Quick and Easy Snack: Cashew Cheese Bruschetta Bites

If you haven't noticed, I just made a new batch of cashew cheese so my body is craving it all the time! Honestly even if you aren't vegan this stuff is great! I needed a quick lunch the other day and this was perfect for it! Eisley loved them and tried to eat all of them but I held my ground and only gave her a few!

  • 10 Pita Bites (I love the ones from Trader Joes but have seen them all over the place)
  • 1/4 cup cashew cheese
  • 2 tbsps of basil pesto
  • 3 grape tomatoes , sliced

Take your pita bites and layer a tsp or so of cashew cheese on the cracker. On top of that take a little amount of pesto and one slice of tomato! Voile that now its ready to eat! Super easy and super tasty! 

These totally rock my world, they are easy to make and delish! They totally work for me!
